How it's made

  1. Rinse 80 g dry quinoa under cold water. Combine with 160 ml water and a pinch of salt in a saucepan. Bring to a boil, cover, reduce heat and simmer 15 minutes until water is absorbed. Fluff with a fork.
  2. While quinoa cooks, preheat oven to 220 °C / 425 °F. Toss 150 g mixed chopped vegetables (sweet potato, bell pepper, onion) with 1 tsp olive oil, ¼ tsp salt, ¼ tsp cumin. Roast 20 minutes until edges are caramelized.
  3. Drain and rinse 80 g canned chickpeas. Toss with ¼ tsp paprika and a pinch of salt. Add to the roasting pan in the last 10 minutes for crispness.
  4. For the dressing: whisk 1 tbsp tahini with 1 tbsp lemon juice, ½ tsp maple syrup, 2 tbsp warm water until smooth.
  5. Assemble bowl: quinoa as the base, roasted vegetables + chickpeas on top, drizzle with tahini dressing. Garnish with chopped parsley.
