How it's made
- Blanch 150 g washed spinach in boiling salted water for 90 seconds. Drain and plunge into ice water. Once cool, squeeze out excess water and blend into a smooth puree.
- Cube 120 g paneer into ¾-inch pieces. Optionally pan-fry in 1 tsp ghee until lightly golden on all sides, ~3 minutes. Set aside.
- In a pan over medium heat, melt 10 g ghee. Sauté 30 g diced onion until soft, ~3 minutes. Add 1 tsp ginger-garlic paste and 1 chopped green chili; cook 1 minute until fragrant.
- Add ¼ tsp turmeric, 1 tsp coriander powder, ¼ tsp garam masala. Stir 30 seconds. Add the spinach puree and 2 tbsp water; simmer 5 minutes on low heat.
- Add the paneer cubes and 20 ml heavy cream. Stir gently to coat. Simmer 3–4 more minutes until heated through and slightly thickened.
- Finish with a pinch of dried fenugreek (kasuri methi) and salt to taste. Serve with roti or rice.
