How it's made

  1. Blanch 150 g washed spinach in boiling salted water for 90 seconds. Drain and plunge into ice water. Once cool, squeeze out excess water and blend into a smooth puree.
  2. Cube 120 g paneer into ¾-inch pieces. Optionally pan-fry in 1 tsp ghee until lightly golden on all sides, ~3 minutes. Set aside.
  3. In a pan over medium heat, melt 10 g ghee. Sauté 30 g diced onion until soft, ~3 minutes. Add 1 tsp ginger-garlic paste and 1 chopped green chili; cook 1 minute until fragrant.
  4. Add ¼ tsp turmeric, 1 tsp coriander powder, ¼ tsp garam masala. Stir 30 seconds. Add the spinach puree and 2 tbsp water; simmer 5 minutes on low heat.
  5. Add the paneer cubes and 20 ml heavy cream. Stir gently to coat. Simmer 3–4 more minutes until heated through and slightly thickened.
  6. Finish with a pinch of dried fenugreek (kasuri methi) and salt to taste. Serve with roti or rice.
